Spring is Here

Spring has sprung, and Summer is on it's way.  Here is my first tomato of the year.  It's still a baby but will grow up to be a delicious Roma tomato.  I can taste the Pasta dishes now.  In fact, let me add a recipe for you right now.

Tomato, Basil, Zucchini Pasta
(serves two)

1 1/2 lbs. Roma tomatoes, peeled and diced
3 cloves garlic, minced or pressed
3 TBS Olive oil
2 TBS Basil, fresh chopped or (1 TBS dried)

Mix all these ingredients and refrigerate until ready to use. (do not freeze)

1/2 lb. of your choice of pasta
Cook pasta according to directions.

1 TBS Olive oil
1 large zucchini, cut into 1/4" cubes

Saute zucchini until al dente, add tomato mixture, lower heat and warm, do not boil.  Add salt to taste.

Serve over pasta with parmesan cheese

sounds like a delicious light summer meal..can I substitute anything else for the squash? May take that to the next cookout I'm invited to.

You can leave it out if you want to, Dee. It tastes really good that way too. Then you could serve whatever veggie you wanted to on the side.

Loretta, thanks for sharing. I just made stuffed shells today but used sauce from a jar. I was just thinking it would be great to make something from scratch soon! This looks delicious.
